For any brew method, we recommend letting your beans rest for about 7 days after roasting. Roast date is located on the bottom of the coffee bag. This gives them time to de-gas and mellow out. After that, you’ll find they tend to shine within a 7–30 day window off roast.
This range works well across brew methods, though espresso usually benefits from a bit more rest. As a general rule, the finer the grind for your brew method, the more time the beans need to reach peak flavor, since finer grounds allow for deeper extraction of those evolving flavors.
